I don't have a Matrox G400 dualhead, but I have two graphics card on my
box, I think there no differences.
The easiest way to do this is to display two differents windows, each on
an individual monitor.
With Linux you can use Xinerama to enlarge your desktop on the two
monitors.
AFAIK for the moment there is no way to use multiple monitor in full
screen mode. And there is not any portable API to do this.

PS: "-DISPLAY" is not used for multiheading with XWindow
